Smoked Chicken & Pesto Fettucine

Ingredients:
400g fresh fettuccine pasta
2 tbsp olive oil
2 cloves garlic, finely chopped
100g basil pesto
Pinch of chilli flakes
2 x 160g cans Chop Chop! Smoked flavour, drained
1/4 cup reserved pasta cooking water
2 tbsp pine nuts, lightly toasted
Parmesan cheese to garnish

Directions:
Cook the pasta to packet directions until al dente and drain. Heat the oil in a frying pan over a medium heat. Add the garlic and cook for 1-2 minutes, add the pesto and chilli flakes and cook for a further minute. Remove from the heat and toss through the cooked pasta, adding a little of the reserved cooking water to help coat the past evenly. Mix through the drained chicken and pine nuts and serve with freshly grated parmesan cheese.
